I would talk with your Dad's doctor to get his general advice and also ask about the idea of being near good health care centers should the cause arise as perhaps more to deal with possible side effects. It would seem it might be bave the trip planned around your Dad so perhaps one or two destinations with side trips from those points for those who might want to. If days can be managed with activity and rest for Dad. Also, you might want to think about his mobility issue and see how you might bring along or rent in England a travel wheel chair. This would certainly make sense for any airport and perhaps for sightseeing some points to. This would also bring up the issue of the accessibility of sites you may want to go to.
Check on how travel insurance might work not for your Dad, but for the family
members traveling with him. Be sure what your options might be on those
tickets such as being able to rebook another trip within a year and with
airlines to use towards another flight within a given amount of time. But
yes if this is something Dad would like to do, go for it.
