I would insist on not letting him go home until the pain is better addressed.
I agree that the celiac block could be helpful. Also, they could start him on a medicine that helps nerve pain now. The combination of a nerve pain medicine plus the morphine class of medicine (dilaudid) can be helpful.
Nerve pain medicines include gabapentin, cymbalta, Effexor among others. You take them every day. These medicines take some time to start working, and often you need to increase the doses.
A pain doctor or a palliative care doctor are essential for your father. Oncologists and gastroenterologists/surgeons are not reliable for managing pain.
