Hi Patti, Let me preface by saying I am not a doctor, nor am I a medical expert; I am just advising from my own experience. That said, I have been cooking a vegan diet for my Mom for the last 2.4 months, almost since the day of her diagnosis. I feel I've had much success with this diet. It's called Macrobiotics. It's pretty radical. No animal food/fat, no dairy products. The one thing you want to do is watch the sugar intake of the PC patient. Because the pancreas is not functioning properly, you do not want to tax this organ into working any harder than it already is. Sugars are hard to regulate, so you want to make sure the food you prepare is absorbed at an even metabolic rate hence the overabundance of rice and grains in this diet.
